Nebraskaland Stir Fry

Super Simple Recipe:

1 onion

1 bell pepper

2 stalks celery

1 pound ground beef

1 head of cabbage

Salt & Pepper to taste

Chop everything & sauté until tender.

Low carb, sugar-free, high fiber, high protein, Paleo friendly, diabetic friendly, Atkins friendly. Think of it as an inside-out Runza®. That’s why I call it “Nebraskaland,” even though I’m in Iowa.

You can customize it tons of ways. I like it with mushrooms. You can brighten it up with red cabbage or orange or red bell peppers. Lean it down by using ground chicken or turkey. If you don’t care about your diet- throw some shredded cheese in there or cover it with whatever ready-made dough and then throw it in the oven for a few minutes and call it a casserole.

ITALIAN: add garlic, oregano, & halved grape-tomatoes, sprinkle with Parmesan

MEXICAN: add green chilies, cilantro, lime, corn, & black beans

ASIAN: add water chestnuts, snow peas, bean sprouts, & soy or teriyaki sauce. Tofu optional.

GREEK: add olives & plain yogurt

GERMAN: add chopped apples, caraway seed & tablespoon of vinegar

    These just dawned on me (yes I’m aware that it’s lame to comment on your own blog)-
    Have the Mexiversion in a tortilla and it’s a more authentic taco than plain ground beef in “taco sauce.”
    MEDITERRANEAN- add some chickpeas and serve in a pita. BAM! Go really crazy, substitute the hamburger with kosher lamb, solve the Palestinean/Israeli crisis with one meal. Why not?
